Honey Bourbon Chicken

So it has been such a long time since my last post. I have just been so crazy, all my roommate and I really eat is hamburger helper. However a little while ago I did make a very delicious recipe. I made honey bourbon chicken. I got the recipe from here. Unfortunately I didn't get any photos :(

I should mention that this recipe is for the crockpot, so it is super simple. Like most crockpot recipes all you have to do is mix everything and turn on the appliance.

So you get your chicken, 2-3 pounds worth (boneless is best) and you salt and pepper it and throw it in the crockpot and put 1/2 of diced onion on top. Then you mix together what will form the sauce. This is 1 cup of honey, 1/2 cup of soy sauce, 1/4 cup of ketchup, 2 tablespoons of canola oil, 2 cloves of minced garlic, 1/4 teaspoon of red pepper flakes. This is what the recipe calls for, but I didn't have any onion so I omitted it and it tasted pretty good. Once you mix up the sauce you pour it over the chicken and cook on low for 3-4 hours.

After the chicken is cooked you put a tablespoon each of cornstarch and water and put the sauce from the crockpot into a saucepan and heat it until it thickens up. Because it was already ten, and I had no cornstarch, I skipped this step. Whip up some rice to serve this chicken with and you are done! I absolutely love this recipe and have made it a few times already.




Honey Bourbon Chicken

2-3 lb. boneless, skinless chicken thighs (chicken breasts could be substituted but thighs are more moist)
salt and pepper
1/2 cup diced onion
1 cup of honey
1/2 cup soy sauce
1/4 cup ketchup
2 Tbsp. canola oil
2 cloves of garlic, minced

1/4 tsp. red pepper flakes
1-2 Tbsp. cornstarch

hot rice
sesame seeds, optional

Salt and pepper the chicken and place in your crockpot.  Place the onion on top of the chicken.
In a medium sized bowl, combine honey, soy sauce, ketchup, oil, garlic, and red pepper flakes. Pour mixture over the chicken in the crockpot.  Cook on low for 3-4 hours. 

Remove chicken from crock pot and slice into strips and set aside.
In a small bowl, combine 1 Tbsp cornstarch with 1 Tbsp water. Pour the sauce from the crock pot into a small saucepan over medium heat.  Add the cornstarch mixture, stirring to combine.  Heat and stir as it thickens.  If the sauce is not thick enough repeat with another tablespoon of the cornstarch/water.

Place the chicken back in a serving dish and pour the thickened sauce over it and and stir well to coat.
Serve chicken over cooked rice and sprinkle with sesame seeds (optional).

Brownie in a Mug

Starting off with news about myself. I got the keys to my very first apartment yesterday!!!!!  No more dorms for me. I'm so excited about this. Now just to get me a bed.

So anyway, tonight my mom and I made ourselves a brownie in a mug tonight. We had made them before, but tonight we tried a new recipe. I should have taken some pictures, but we ate them too quickly.

This recipe was super easy and quick. It was also very delicious.

So here are the ingredients:
4 tbsp flour
3 tbsp sugar
2 tbsp cocoa powder
dash of salt
2 tbsp vegetable oil
2 tbsp milk
chocolate chips (optional)

So just mix it all up and microwave for a minute. For us we had to add a little extra milk. I got the recipe from here. So have fun and enjoy!

Basil Pesto Grilled Cheese

So it has been such a long time since my last post. I have been super busy. This post will be short so sorry in advance.

Anyway, the last recipe that I tried was Basil Pesto Grilled Cheese. It was pretty easy. All you do is put a little basil pesto on one slice of bread and then mozzarella cheese on the other slice. You can also sprinkle the outside of the slices of bread with grated Parmesan. Then you just make it like you would a normal grilled cheese.

It was pretty tasty. The only bad part is that I had to make my own pesto and I had to buy the basil, which was pretty expensive. I guess if you grow your own basil it wouldn't be as bad.

Again, sorry for such a short post. Hopefully I will be able to cook more and then post about it. I hope everyone has a wonderful day.

Baked Zucchini Chips

Zucchini is something that we eat in my house a lot. We all like it, all except my sister. So I got a recipe for zucchini chips off of pinterest. I decided to try it when I found extra zucchini in the fridge.

The recipe uses the following ingredients
1 zucchini, sliced at an angle
1/4 cup milk
1/4 cup panko bread crumbs
2 tbsp. plain bread crumbs
2 generous tbsp grated cheese
1/4 tsp salt
1/4 tsp pepper
A sprinkling of crushed red pepper


Put the milk in one bowl and all the other ingredients in a separate bowl. Dip the zucchini first in the milk and then into the dry ingredients. Put them on a greased rack on a cookie sheet. Bake at 425 for 30 minutes.

So there are your zucchini chips. I honestly did not like them, but I think that it is just because I put too much bread crumbs on the zucchini. So try it out and let me know if it is just me who this recipe didn't work out for. Have fun!

Microwave Cookie in a Cup

Fun fact about me, I am a chocoholic. Seriously, you put chocolate anywhere near me and it will disappear into my stomach. So when I see a pin for a chocolate chip cookie I know that I have to try it. I saw this pin about 10 minutes before I finished eating said cookie. I saw this, showed my mom, and then went to the kitchen.

Just a random thought that just popped into my mind. My future husband, whoever he is, will be a lucky man. All those jokes about woman belonging in the kitchen will be a little true. I love to cook. Almost any time of day. He asks me to make dinner, done. And I'm an amazing sandwich maker. Haha. The only rule I will have is if I cook, he washes the dishes. I hate doing dishes. Anyway, I digress.

So this recipe is one of the quickest dessert recipes in the world. It took less than five minutes.

First gather your ingredients and your microwavable bowl (like a small soup bowl)
1 tbsp melted butter (you can use the bowl you are making the cookie in)
1 tbsp granulated sugar
1 tbsp brown sugar, packed
1 egg yolk
3 drops vanilla
1/4 cup flour
2 tbsp chocolate chips
Pinch of salt


Mix. Microwave for 40-60 seconds. Voila! Your chocolate chip cookie in a cup, or in this case bowl. It was bigger than I thought so I split it with my mom. It wasn't a normal cookie texture, but it was still good. I will definitely make this again.


One good thing about this recipe is that you aren't tempted to eat the whole batch of cookies you made. It is also super easy. Here is the original pin.

If you have a chocolate craving here is a solution without having to make a lot. I plugged in the recipe into the awesome LoseIt app (which I highly recommend) and it came out to about 350 calories in one of these. But they are quite large and I split mine, so really I only ate 175 calories and it still satisfied me. So indulge yourself and try out this recipe.

Homemade Hummus

So, I absolutely LOVE hummus. During the last spring semester I probably had hummus like three times a week, but it was always store bought.

I saw on Pinterest a recipe for hummus so I figured, why not? This is the picture from the pin that caught my attention


This recipe didn't have too many ingredients in it. And it was super easy. All you need is garbanzo bean, tahini sauce, cucumber, oil, lemon juice, cilantro, pickle juice, garlic powder, salt, and paprika. Oh, and don't forget the blender/food processor.

All of the needed ingredients were either in my pantry or easily found in the store, except the tahini sauce. Tahini sauce is impossible to find in my area. So, I made it myself. This is the recipe I used: Tahini recipe

So once you make or buy the tahini sauce you put 2 regular size cans of garbanzo beans, 1/2 a cucumber diced, 1/2 cup extra virgin olive oil, 6-7 tablespoons lemon juice, 1/2 bunch cilantro, a dash of pickle juice, 1 teaspoon garlic powder, 1/2 cup tahini sauce, and a 1/2 teaspoon each salt and paprika into a food processor or blender. You blend it until it reaches your desired consistency. And ta-da! You get hummus.

I found that I had a little too much cucumber, not enough garbanzo beans, not enough lemon juice, and definitely not enough paprika. So I just added whatever I felt it needed until I felt it tasted good. Be warned, this makes like 2 1/2 pounds of hummus. That is a lot.

I ate so much of this that I almost made myself sick. It tasted so good. I will definitely make this again.

So, this is my first post in this blog. Yay! Well anyway... I'm devoting this blog to all of my cooking endeavors. I get soooo many recipes off of Pinterest and other websites so I've decided to start trying them all. Why not blog my awesome new creations, or disasters. As you could probably tell from the blog title that I am a college student. Along with school I work so much. When fall semester rolls around I probably won't have much time to blog, much less cook. I will be living mainly on frozen meals. Haha. Well I hope you enjoy my tales of trying new recipes. I will of course include the recipe I am making and the link to where I found it. So, eat up!
